Turkey Zucchini Meatballs

An exciting twist on the traditional meatballs. Enjoy a lightened up version with lean ground turkey.


  • 1 lb. ground turkey breast
  • 2 cups grated zucchini
  • 1 small onion, diced
  • 4 tsp dried cilantro
  • 1 clove garlic
  • 1 tsp salt
  • ½ tsp pepper
  • olive oil or coconut oil


  1. Preheat oven to 400F.
  2. In a large bowl, mix grated zucchini, onion, cilantro, garlic, salt, and pepper together.
  3. In a foil-lined, greased, 9 x 13 baking pan, scoop ~1 inch meat balls onto pan and drizzle with a small amount of olive oil.
  4. Bake for 20-25 minutes until browned on top.
  5. Serve over zucchini noodles, whole grain pasta, or enjoy as turkey zucchini poppers.

In her previous role as a public health and community-based dietitian, she led “food as medicine” initiatives in coordination with health care providers to provide nutritious food to low-income patients with diet-related health challenges. She also led nutrition workshops, cooking demonstrations, and assisted with menu planning for afterschool programs and senior meals.
