Paleo Chocolate Chip Cookies

Ingredients:

  • 2 ½ cups almond flour (finely ground)
  • ½ tsp sea salt
  • ½ tsp baking soda
  • ½ cup melted virgin coconut oil
  • 1 tsp cinnamon
  • ½ cup local maple syrup
  • 1/2 cup dark chocolate chips (I like Enjoy Life)

Instructions:

  1. Combine all ingredients except the chocolate chips in a large bowl and mix thoroughly
  2. Spread on a baking sheet lined with parchment paper if you want to make cookie bars. You can also make these into individual cookies.
  3. Bake at 375° for about 15 minutes, until edges start to turn golden brown
  4. Let cool for a few minutes and enjoy!!!

In her previous role as a public health and community-based dietitian, she led “food as medicine” initiatives in coordination with health care providers to provide nutritious food to low-income patients with diet-related health challenges. She also led nutrition workshops, cooking demonstrations, and assisted with menu planning for afterschool programs and senior meals.

Ariana enjoys cooking, trying new things, and staying active with yoga and Crossfit!
